The guys over at the Freakonomics Blog were out to dinner recently, and their waitress kept trying to sell them artichoke dip for no discernible reason.  That is, until they asked her why.

Turns out “the chef had created a new dessert (and she loves dessert). Whichever member of the wait staff sold the greatest number of artichoke dips… that night would collect a healthy portion of the new dessert for free as a reward.”

Wegmans, a grocery store chain that’s perennially on Fortune’s list, gave out 10 percent food discounts at holiday time last year.
